Special Birthday Tasting dinner

I'm preparing a special 9 course tasting menu tonight for a client's birthday party. It's a formal sit-down dinner for 8, with wines from the client's own wine cellar. Some of the refcipes can be found on The Gilded Fork. Here is the menu:

Hors d’oeuvres
Tartalitas de Pimiento – Spanish Pimiento Custards
in mini-quiche cups

Bruschetta Tartufata – Wild Mushroom Bruschetta
with grated Black Umbrian Truffles

Asparagus Risotto with King Prawns

Sautéed Duck Breast
with Green Peppercorn Morel Cream Sauce and steamed Baby Vegetables

Vegetable Morel Jalousie

Herb Crusted Rack of Lamb
with Garlic Smashed Potatoes and Balsamic Reduction

Spaghetti ai Tartufi Neri - Spaghetti with Black Truffle Sauce and shaved Parmigiano Reggiano

Cheese Course
Speziato al tartufo, Campo Montalban with membrillo, Stilton and Brillat-Savarin

Poached Pears with Chocolate Raspberry Sauce
