ReMARKable Palate Podcast #41

ReMARKable Palate Podcast #41: Bobolink Dairy and Career Transitions for Chefs

It's the return of my greenmarket coverage, with a new regular feature, the Greenmarket Report. Today I interview Jonathan White of Bobolink Dairy (www.cowsoutside.com), who was selling his artisanal cheeses and breads at the Union Square Geenmarket. Following that interview is a phone conversation I had with a chef who's considering a career change.

#40: Strolling the Upper West Side with Don Genova

I was featured on Don Genova's CBC radio show "Food For Thought", so I thought it only fair to turn the tables on Don and interview him! We speak about Don's Italian heritage, their immigration to Canada, and his exploration of Sicilian Culinary traditions. Along the way, we tour some of the Culinary Hot Spots of the Upper West Side of New York City. Plus a listener phones in from Merry Old England!

ReMARKable Palate #39: The Preview Episode

A different sort of show today, as I bring you audio previews of some of the upcoming shows I'm planning for the next few weeks, including a soundseeing tour of SoHo, a Vietnamese cooking class, an interview with Don Genova of All You Can Eat, and some great street singing. Plus, I talk about several of the great menus I've done for my clients over the past week, now that the Spring entertaining season is in full swing.

Well, it seems to be the season for parties and entertaining! I've been quite busy these past couple of weeks with special events for clients (hence my rather infrequent posting here - sorry!).

So here is a menu I'm preparing tonight for a post lecture reception for 30 for a noted speaker here in New York City. This meal will be served buffet style, so you can prepare most dishes in advance and keep warm when the guests arrive.

Champagne Salmon and White Bean Salad
Flaked Poached Salmon with White Beans with a Basil Lime Dressing

Baby Spinach, Grape Tomato and Crouton Salad with Miso Ginger Dressing

Dessert

Chocolate Crackle Cookies

Mother's Day Family Dinner

Each year I cook a Mother's Day meal for friends of mine, and they invite the whole extended family over. In the past I have done ethnically themed meals for them, but this year I decided to focus on the sense of smell, and present dishes from the Gilded Fork which highlight the more aromatic and fragrant ingredients.

Congratulations to Jean-Louis Gerin

Our good friend Jean-Louis Gerin won a James Beard award last night as Best Chef in the Northeast for his restaurant Jean-Louis in Greenwich, CT.

We were among the first to congratualte him at the Pellegrino sponsored after party at the Westin Hotel in Midtown, where he wore his newly minted medal with humility, while those around him tried to get him to display it even more prominently.

Stay tuned for an in depth recap of all the weekend's festivities and other award winners.

We will also be publishing an in-depth profile of Jean-Louis in our Behind the Toque section at The Gilded Fork.

Nice Review of the RP Podcast

This review was recently posted by Rickard at the My Daily Recipe Blog. Have a look!

"First I have to say, sometimes 5 episodes is not enough to do a review. That was not the case with this podshow. I found myself actually WANTING to hear more from the first episode I heard.

Part of that was due to a 2 part interview with Vic Cherikoff of www.cherikoff.net. These were an absolutely wonderful 2 episodes to listen to. I also had no difficulty finding time to listen to them.

The interviews went very well and kept a flow to them. It seems Mark may have done interviews previously or it comes very naturally to him. They were very entertaining to say the least."
